The Eggplant Extract Benefits

Brief History of Eggplant

The eggplant considered comes from India where it grew wild, and was first cultivated in China. It was introduced into Europe during the Middle Ages by the Moors where it soon became popular. By the 18th century both the French and the Italians cultivated eggplants, which they called Aubergine. Other names for eggplant are Melongene, brinjal or guinea squash.

Cooking.

The raw fruit can have a somewhat bitter taste, but becomes tender when cooked and develops a rich, complex flavor. Salting and then rinsing the sliced fruit can soften and remove much of the bitterness though this is often unnecessary. Some modern varieties do not need this treatment, as they are far less bitter. The fruit is capable of absorbing large amounts of cooking fats and sauces, allowing for very rich dishes, but the salting process will reduce the amount of oil absorbed. Eggplant can be cooked in many different ways grilled, fried and can be stuffed with meat, rice, or other fillings and then baked.
